The Little Details
This coffee comes from Rio Brihante Farm in Coromandel Cerrado, Brazil. It's grown 1000 to 1250 metres above sea level. Cerrado alone is estimated to produce as much as 12.5% of Brazil’ total coffee output and has now received ‘Origen status’, meaning only coffee from Cerrado can be called Cerrado, similar to Champagne in France. This exceptional quality is noted to result from a combination of climate, soil, terrain and the general ‘know how’ of its people.
About the Process
This particular Lot from Rio Brihante is 100% handpicked Catuai.Cherries are picked and sorted ,before being placed in barrels that are airlocked. The cherries then
ferment for 48 hours before being dispersed on patios to dry in the open sun until they reach the desired moisture of below 12% or less.
