The Little Details
This coffee comes from fazenda Rio Verde in a town called Serra da Mantiqueira in Sul Minas, Minas Gerais in Brazil. It's grown 1029 to 1056 metres above sea level. It's 100% Yellow Bourbon varietal coffee beans.
About the Process
This 100% Yellow Bourbon lot was harvested on May 13th, 2023, from Glebe B67. The coffee was selectively hand-harvested and then processed using the traditional Natural method with an anaerobic fermentation for 64 hours. After processing, the cherries were dried on conventional patios for 293 hours and finished in vertical dryers for 119 hours. Once dried, the coffee is rested in bags before being hulled and prepared for
export.
